With Old Man Winter well and truly rearing his frostbitten head, we could all do with a dish that warms our bellies and the cockles of our hearts.
Well, the folks over at Susuru are definitely up to the task with their latest Farm to Bowl series of ramen specials.
Following on from the truly tempting Wagyu Rib Kuppa Ramen, which kicked off the series and last month’s Jack’s Pork Belly Ramen, the popular East End Eatery has done it again, this time piquing the interest of vegos and vegans everywhere.
The latest special, the Mushroom Madness Ramen is exactly what the title suggests with a trio of mushrooms – shimeji, king brown and pearl (all sauteed together with sansyo pepper, sesame oil and ginger) – taking centre stage.
Those complex fungi flavours are augmented by an earthy and flavourful Swiss brown mushroom, potato and leek broth which and wholemeal noodles.
The bowl is topped off with spears of fresh green asparagus and a blend of black garlic and black truffle oil.
If this dish sounds right up your culinary alley, but are after something a little ‘meatier’ never fear because the word is that if you add some of Susuru’s delectable chashu chicken to this concoction, your taste buds will sing!
