The last time ramen wranglers Susuru teamed up with Mexican street food aficionados Antojitos, the result – the Epico Tortilla Ramen – set Newcastle hearts and taste buds aflutter.
Well, in a case of one good turn deserves another, the two Newcastle eateries have joined forces again and the result is just as epic.
This meeting of culinary minds has yielded the Antojitos Birria Ramen – an exciting take on Birria – the iconic soupy, slow-cooked stew that originated in the Mexican state of Jalisco.
Traditionally made with goat, this punch-packing portion uses tender beef brisket as its main source of protein inspiration with a flavourful and tangy Birria broth forming the base.
Add to that some crunchy jalapenos, Antojitos’ pico de gallo, marinated egg, lime, and melted cheese, and you’ve got yourself one heck of a layered, cross-cultural flavour bomb!
Oh, and the crunchy icing on this cake is the addition of a crunchy taco created with Antojitos’ corn tortillas – the perfect thing to dip into that gorgeous Birria broth!
Speaking of that Birria broth, traditionally it’s a de3lcious combination of chill, adobo, cumin, bay leaves and time and seasoned and garnished with onion, coriander, and lime.
Vegans and vegos need not be left ou, either. Simply swap out the beef brisket for some mouthwatering jackfruit and, viola! Welcome to flavour town. Population? You!
And if this pair’s last collaboration is anything to go by, it’s pretty much a given that this special guest star is going to be off the hook!
