RATHMINES BUTCHERY: A Family tradition of quality cuts and customer care

For Jason Smith, serving up the freshest, quality cuts of meat isn’t just a consuming passion. It’s in his blood.

Jason comes from a long line of butchers – six generations in fact – and, since purchasing Rathmines Butchery from dad Stephen in 2018 (after completing his apprenticeship in the shop and becoming a partner in 2009) his commitment to quality and customer service continues to place the shop a cut above the rest.

So much so in fact, that in a recent Newcastle LIve readers’ poll to unearth the region’s favourite meat masters, Jason and the team at Rathmines Butchery came out on top.

This is just the latest in a long line of plaudits for Jason and the team, with Rathmines Butchery taking out top honours in the Outstanding Butcher Shop Category in the 2020 Hunter Business Awards as well as best jerky in the Hunter and second overall in NSW at the 2020 Newcastle / Hunter Region Australian meat industry awards.

And it’s not hard to see why.

Rathmines Butchery stocks a wide range of fresh, hand-selected beef, lamb and pork products including an extensive array of award-winning sausages including gourmet beef, pork, chicken and lamb.

Also, many of these bangers are made gluten-free which is great news for celiac sufferers.

In fact, customer health is a high priority here, with Jason and the team producing a range of preservative and nitrate-free products including all-natural ham and bacon.

An in-house smoker means that hams can be prepared all year round – not just during the silly season, and Rathmines Butchers also produces its own silverside, Kransky, beef jerky alongside a range of small goods lines, freshly sliced to order.

Jason is also now dry-aging selected beef for 40 days allowingnatural enzymes in the meat to break down muscle fibres and connective tissue offering the ultimate flavour, texture and tenderness.

Rathmines Butchery also boasts a catering division that can look after functions of all shapes and sizes with a range of delectable canapés, mains and desserts.

Another large focus of the business is a love of community – something that manifests in the sponsorship of community sport, and fundraising activities including the Bones For Charity program which has raised a whopping $101,000 from 2007 to date.

The money, raised from customer donations and the sale of bones has gone to support a range of organisations including Westpac Rescue Helicopter, Camp Quality, SES, and the Cancer Council.
