This Friday Merewether’s iconic Beach Hotel will unveil its coastal dining experience, Peregrin.
The newly renovated hotel has been warmly received by locals since opening only a few weeks ago and will now add a new jewel to its crown.
Peregrin promises a blend of laidback luxury dining focused on the natural flavours of salt, wood, and smoke. Its menu will offer an elevated bar and grill menu that pays homage to the area’s rich heritage.
“Just like The Beach Hotel below it, the restaurant has been created with connections to the community’s history plus a healthy dose of surf and sand to be a place that feels familiar and fun while offering a fresh take on some of our country’s best produce,” Glenn Piper, owner of The Beach Hotel, said.
Executive Chef Adam Rust will lead the culinary team at Peregrin, crafting a season-led menu centred around premium local ingredients cooked over a traditional charcoal grill.
Highlights of the menu include Smoked Yumba Abalone, Wagyu Croquettes, Bug Rolls, Eastern Rock Lobster, Whole Roasted Cauliflower, and a selection of steaks sourced from local producers.
“Unfussy and relaxed,” Adam said.
“Whether you’re stopping by for a quick bite after a beach day or spending a breezy evening out with loved ones, we wanted to offer something that gives you a distinct taste of the nature, history and coastline of Merewether.”
In addition to its delectable cuisine, Peregrin will also be serving up a vibrant bar experience featuring an array of snacks and small plates alongside signature cocktails and a curated wine list highlighting local Hunter Valley vineyards.
