Ok, so it’s winter and you’re looking for something to warm the insides and give you that satisfaction only a sweet treat can provide. Ladies (and gentlemen) I give you Jack Daniels’ Gentleman Jack. Don’t let the name of this double mellowed Tennessee whiskey fool you either, this boozy chocolate brownie we’ve put together is the perfect accompaniment to a warming espresso martini. It’s a combination that will get any wintery girls nights started just right.
Gentleman Jack Brownie
Ingredients
250g butter
1 cup Gentleman Jack
1 cup brown sugar
1 cup caster sugar
½ teaspoon salt
1 cup cocoa
1 teaspoon vanilla extract
2 eggs
1 cup SR flour
1 ½ cups chocolate melts of your choice
Method
Preheat oven to 160°C
Place butter, whisky and sugar and salt in a wide rimmed medium saucepan or deep fry pan and melt over a low heat until the butter is completely melted. Add the cocoa, whisk until smooth and set aside to cool.
Once cooled, add eggs and vanilla to the pan and beat until silky. Add sifted flour and mix until combined. Pour chocolate melts into the mixture and gently fold through.
Pour the brownie mix into a greased and lined lamington tray and bake for 25-30 minutes
Remove from oven and allow to cool before cutting.
Gentleman Jack Espresso Martini
Ingredients
30ml Gentleman Jack
30ml Espresso Liquor
30ml Espresso
1.2 cup Ice
Method
Pour all ingredients into a cocktail shaker and shake vigorously. Strain into a martini glass and garnish with a sliver of brownie.
