Get ready to Bao down, Maitland.
That’s because popular Newcastle (formerly) and Charlestown eatery Bao Brothers has announced they’re heading to your part of the world in a move that is bound to make Hunter street food fans squeal with delight.
Yep, you read right. Bao Brothers will be setting up shop at East Maitland shopping Mecca Stockland Greenhills and will open its doors on Saturday 8 August.
David Griffin who co-owns Bao Brothers with Nathan Martin told Newcastle Live that the move will initially be temporary but that very much have eyes on being a permanent fixture.
Never fear though, the Charlestown store is very much still a thing.
“We are there as basically a pop-up for six months in total with a view that if Greenhills loves us and if everything goes well with COVID we will take the space in the outdoor dining precinct permanently,” he said.
David added that the decision to head up to Maitland was born out of a desire to say “thanks” to their fervently loyal customer base in that neck of the woods.
“We’ve done a lot of events up there like Maitland Taste, Riverlights and Bitter and Twisted – we have built up an amazing customer base there so it’s really good to be able to give something back to the people that have supported us.”
The new store will feature the same menu and specials that you can expect to find in the Charlestown store and David added that diners in both Maitland and Charlestown can look forward to some new menu items for the spring and summer including loaded soft serves.
And there’s no doubt that the boffins at BB HQ have not been resting on their laurels during this insidious pandemic.
Aside from securing the new Stockland location, and sadly the demise of the brilliant Newcastle West concept BB After Dark, Bao Brothers has also been busy creating its personal delivery service and the Bao at Home Kits.
In fact, it’s fair to say that t.he pandemic has not stopped Bao Brothers in its tracks. But rather, it has emboldened them to take the business to the next level.
“We saw it [the pandemic] as an opportunity to really have a look at where Bao Brothers is now and where we want to take it into the future,” David said.
“People might go ‘oh a shopping centre,’ but food is changing. Shopping centres are changing.
“People aren’t always going there to shop they’re going for an experience and that’s what we’re providing – a niche product, that’s funky and different and fresh in a new way..”
Bao Brothers will open doors at Stockland Greenhills on Saturday 8 August. It will be open from 11am to 5pm Sunday to Wednesday and 11am to 9pm from Thursday to Saturday. Head here for more info.
