Adam Liaw discovers the best garlic in New South Wales right here in the Hunter

Adam Liaw reckons the Hunter Valley is about more than just wine.

On a recent visit to the Hunter as part of a partnership with Lilydale, Adam began a search for a Hunter producer who has put their heart and soul into growing local ingredients.

During the search he a small family-run farm located in Bellbird that specialises in organically grown giant garlic.

“I’ve travelled the world, hungry for inspiration. It was found right on my doorstep in the Hunter Valley,” Adam said.

“I often visit the local farmers here for ingredients for my dishes. Each producer is dedicated to one thing, which makes them incredible at what they do.

Black Garlic is a unique ingredient often used for flavour in various Asian cuisines for centuries. With its softer, molasses-like flavour, it’s a more delicate option to your chicken dish compared to the raw bulb.”

Peter and Michelle Forster, who own Bellbird Garlic, moved from the Central Coast to the Hunter Valley only five years ago.

“We were originally only going to sell fresh and smoked garlic, but after we tasted Black Garlic at a market, we were hooked,”

Adam showcased the work of Bellbird Garlic in a recipe, and video series, he created as part of the Lilydale promotion.
