It’s hard to look past Champagne when deciding a celebratory bevvy and with Mothers Day around the corner a glass Mumm Champagne (see what we did there) is the perfect choice for toasting to all of the Mums in your life…. but how about we pimp it up this year?
Mumm Cordon Rouge Brut is one of the best Champagnes around so when deciding how to use it in a cocktail we thought we should keep it classy. This cocktail will give Mum a pretty drink for her Mother’s Day brunch without destroying the delicate flavour of the Mumm Champagne.
Traditional champagne cocktails use a cube of sugar and a dash of bitters for that sweet & tart balance that elevates the flavours of the champagne. This version uses a sweetened frozen fruit cube instead to add an element of pink sophistication to Mum’s special day.
> 1 lime cut into 6 wedges
> 4 teaspoons sugar
> seeds of 1 pomegranate
> 1 pear, finely grated (plus extra for garnish)
> 1 bottle of G.H Mumm Champagne Brut
Place the lime wedges, sugar and 3/4 of the pomegranate seeds (keep the remaining seeds for garnish) into the base of a cocktail shaker. Muddle the fruit and sugar together until the mixture is well combined and the pomegranate has begun to break down. Add the grated pear and muddle again until the pear changes from a pulp to a juice. Add a couple of cubes of ice to the shaker and shake the mixture vigorously for a minute.
Strain the liquid into an ice cube tray and freeze overnight. This recipe will make 8-10 fruit cubes depending on the size of your ice tray.
Once the cubes are frozen, you may need to use a butter knife or spoon to slide them out of their tray. Place a cube at the bottom of your champagne flute or cocktail glass. Line the glass with slices of finely sliced pear and pour chilled Mumm Champagne over the cube. garnish the cocktail with some pomegranate seeds and enjoy…
