Bank Corner Pop-Up Natural Wine Bar
For one month only, Felix Delaboire, formerly of Kid and Cat, will create a unique wine bar experience within the cosy establishment of the Bank Corner Espresso and Bar.
The Bank Corner Wine Bar will focus on natural wine along with hand-selected local delicacies to create a quintessential French experience for guests to share in with their friends.
The wine menu will focus on natural wines that have been created with very low intervention, often using biodynamic and organic techniques.
‘Everyone is really looking at what they eat. People are looking for better ingredients with less chemicals, and are looking at the labels and noticing what is in their food. Why don’t people also do this with their wine?’ says Felix.
The natural wines available will be preservative free and many will be sulphate free, which allows flavours to develop slowly. The result is what some call a ‘living wine – wholesome and full of naturally occurring microbiology’.
There is sure to be a few drops that many people will have ever heard of before. Including Brash Higgin’s Chenin Blanc, of which only 95 cases have been produced, as well as the wild orange coloured Zibbido Amphora, which is fermented in terracotta amphorae.
The Bank Corner Wine Bar will also be serving the best cheeses and saucisson (French-style cured meat) from Pork Ewe Deli. Each week, four types of European cheeses and French saucisson will be available to create scrumptious share plates. Cheeses include the Comté, which is matured in silent dark caves in France, as well as the Reypenaer, which is turned by hand in a historic cheese warehouse in Woerden, Netherlands.
Fresh bread will be provided by Covered in Crumbs, the latest newcomer to the Novocastrian artisan pastry scene. Established by pastry chef Gareth Williams, Covered in Crumbs showcases a variety of classic and modern techniques to create distinctive flavour profiles and textures.
